Alfonso – our head-roaster – set out last year to find the best coffees in Colombia. On his 10-day origin trip, he met with multiple farmers all over Colombia. With Fred Bertolone from Plurilateral Coffee, our exporting partner in Colombia, he had the chance to meet with Hernando Arcila. Hernando is a third generation coffee farmer who inherited two farms when his father passed away 20 years ago. For many years his focus was on producing high yields but since 2020 he enrolled in a single state program in search of producing high quality coffee in volumes. After one year of hard work Hernando is ready to offer the world a high quality coffee with two harvests per year and the intention of establishing long term relationships.

The origin
Being the third largest exporter of coffee, Colombia has a wide range of coffee growing regions but a great deal are located in the Coffee Growing Axis of Colombia. This Coffee Growing Axis comprises of several departments (including Quindío) and are recognised as UNESCO World Heritage Site as part of Colombia’s ‘Coffee Cultural Landscape’.
The fermentation
This coffee was exposed to a dry anerobic fermentation of 24 hours, later placed inside grainPro hermetic bags for 60 hours maintaining temperature below 22 degrees celsius by placing the coffee inside a water tank. Later, placed on raised bed until 18% moisture content is achieved, afterwards the coffee is placed once again inside grainPro hermetic bags again for 50 hours and later left to dry below 40 degrees celsius on raised beds until 10.5% moisture content was achieved.
