Papayo is back! In 2021 Alfonso, our head-roaster, set out to find the best coffees in Colombia. On his 10-day origin trip, he met with multiple farmers all over Colombia. With Fred Bertolone from Plurilateral Coffee, our exporting partner in Colombia, he had the chance to meet Oscar Ome. The coffee is a Castillo & Papayo variety, the lots are located at an average height of 1,700 meters above sea level, the process that was carried out is an alcoholic fermentation process, where we isolate microorganisms of the previously mentioned varieties and inoculate them in a competitive way.It’s the second crop of this coffee since Alfonsos return ’cause we can’t get enough of it ourselves!

The fermentation
The fermentation process is starting with controlled temperature, PH, total solids, conductivity and Brix grades, where we wait until all the variables and microorganisms generate a growth curve to be able to lead to drying. In this case the variables stabilized after 120 hours, after the fermentation process, a drying process of 15 days was achieved.
