About the farm
Banko Gotiti resort is nestled in the Ethiopian mountains. The Gotiti station, established in 2010, has a unique terroir shaped by the surrounding peaks of Qunashu, Dula Mezorya, Asgori Gara, and Baya. The station processes coffee from the 400 growers it works with, using fresh water from the nearby Qunashu River.
The Yirgacheffe appelation covers a limited area. It is characterised by low production volumes but high perceived quality. Yirgacheffe is the name of a town with a population of several tens of thousands. The production areas are Yirgacheffe, Kochéré, Wenago and Gelena Abaya.
About the process
After harvesting, the cherries are sorted and then washed, before fermenting in tanks for 48 to 72 hours. 8 employees of the station are then responsible for washing the cherries with the utmost care.
After washing, the coffee beans are dried for between 7 and 10 days, depending on the weather, on raised beds, with the humidity of the beans monitored throughout the drying process.
